Chocolatey Mousse Ridiculousness

photo 1O_M_G! I recently discovered this chocolate mousse recipe and since then I’ve been knocking it together at the drop of a hat (and I’ve been dropping lots of hats recently).

This is rich, creamy, chocolatey, sweet, satisfying and it totally hits the spot. It doesn’t contain sugar, dairy, gluten or any nasty preservatives that store bought products pack in.

Its full of goodness, contains super foods, and the best thing is…it takes less than 5 minutes to make!

Seriously….how can something soooooo tasty be so healthy?

Ingredients:
1/2 cup raw cashews
1/4 cup filtered water
2 medjool dates (pitted)
3 tbsp raw cacao powder
Pinch of salt
Berries to serve

Method:
Chuck everything into a blender (except the berries)
Blend with enough water to get the desired consistency
Spoon into pretty glasses
Top with berries and eat!

This serves 2 but every time I’ve made it I’ve doubled the quantities as it keeps really well in the fridge. Its only lasted a matter of hours so far before getting eaten but I’m sure it would be fine for a couple of days if it wasn’t scoffed so quickly. Apparently it freezes well too but there’s no way it would last long enough in our house to find its way into the freezer.

Nutritional Benefits:
Cashews: are rich in heart friendly monounsaturated fatty acids, abundant in essential minerals (manganese, potassium, copper, iron, zinc), and are a known natural anti-depressant – one small handful a day has been said to the be the equivalent of one prozac a day!

Raw Cacao: has the highest anti-oxidant out of all the natural foods in the world, its rich in magnesium, it contains iron, copper, calcium, potassium and zinc, and its a guilt free treat with an utterly decadent taste!

I might actually have to start restraining myself soon (maybe!)

The (Easy) Green Smoothie Revolution!

10358_10152991118010174_1975235676_nI first dipped my toe in the water of wellness almost 12 months ago by attending an afternoon workshop not far from my home (huge thanks to Mr K for recommending and attending with me). Back then I had no idea of the snowball effect that would happen. The 4 hour “Introduction to Raw” workshop was run by the lovely Amanda at The Raw Food Kitchen. I would highly recommend these workshops for anyone Sydney based with an interest in understanding more about nutrition and raw food. The Raw Food Kitchen also has some fantastic e-books available which helped get me on my way.

One of the many things I learnt that day was about how smoothies (especially green ones), are super nutritious, really tasty, and very easy to make. When the sample smoothie was put in front of us we all baulked at the thought of drinking this green, slightly alien looking concoction. But we were all so surprised at how sweet and tasty it was. There were smiles and happy faces all round. And I can’t stress enough at how easy they are to make! This was when my smoothie revolution started, I think originally it was because I saw it as a lazy persons way of getting a massive boost of goodness without much effort (and I wasn’t wrong). Any food stuff that doesn’t take much effort on a busy work morning is a good thing in my book!

What happened next was quite incredible. Firstly, the morning green smoothie became part of my routine and I soon started jumping out of bed each day with a spring in my step and a smile on my face. Secondly, by replacing my breakfast with a huge green smoothie I suddenly had so much more energy that I didn’t know what to do with it all. And thirdly, I magically dropped over 5 kilos without actually doing much exercise at all (this is unheard of right?!)

My work colleagues and friends initially thought I’d gone completely bonkers when I started posting pictures of my creations on Facebook. But those pictures started to spark interest and I was getting a lot of questions about how to make them. Before I knew it my friends had started to join my smoothie revolution and my Facebook news feed was full of pictures of delicious goodness!

Follow these simple steps and join our smoothie revolution:
1. Add a green base to your blender, I use baby spinach mainly but kale works well too.
2. Add your favourite fruits. This hides the taste of the greens and makes it sweet and delicious. Start off gently but work towards a 75% green / 25% fruit combo for maximum nutrition
3. Add some ice and a little bit of liquid. I use filtered water mainly but orange juice and coconut water work well too.
4. Blend well and drink!

Tips: Preparing fruit the night before saves heaps of time – If you’re super stretched pop everything (except the ice & liquid) into the blender before bed and you’re ready to rock once you wake – Organic produce is best but if you’re on a tight budget or just starting out make use of the things you already stock in your kitchen.
